The greatest vertical force anyone has withstood is 31.25 g, although for that the subject, NASA doctor R. Flanagan Gray … was in a special water tank that pressurised his body to help him take the g's.
The Demon is officially capable of pulling 1.8 Gs. The driveline sees 11,164 pound-feet of firing gear torque, thus resulting in the massive amount of G force. For reference, that's slightly more than the Bugatti Veyron (1.55G), and more than half that of a space shuttle (3G).
Maximum vehicle acceleration depends on tires and horsepower. Top of the line production muscle cars can go from 0 to 60 mph in 5 seconds. Average acceleration is 60 mph per 5 seconds which equals 12 mph per second and equates to +0.55 g's.

Normal humans can withstand no more than 9 g's, and even that for only a few seconds. When undergoing an acceleration of 9 g's, your body feels nine times heavier than usual, blood rushes to the feet, and the heart can't pump hard enough to bring this heavier blood to the brain.

It's generally agreed some of these flying metal birds can pull up to 15 Gs and don't break apart, but given how literally no one reached that, it's hard to say what's the limit.
The speed stabilizes and the G meter reads 7.0. You continue the G strain, but your body is in pain. Not only does it feel like being smothered by really heavy weights, but every inch of your body feels as if it is under a vise. The pain is overbearing, but you have to hang on.

Most roller coasters pull about 4 G's. Some coasters pull five G's or even six. Once a person is at five G's, he/she is likely to black out. At nine G's, a person could die.
